One of my favorite items to stock my freezer with is shredded chicken. I first got the idea from 5 Dollar Dinners.
What works best for me now is buying up split chicken breast when they are on sale (typically .87-.99 cents/lb). I prefer white meat.
Shredded Chicken
Ingredients
6 Bone in Split Chicken Breasts (or whole chicken)
2 c water
Spices
1. Pile 6 chicken breasts into crock pot.
2. Add 2 cups of water.
3. Sprinkle with garlic powder other spices that you prefer.
4. Cook on low for 8-10 hours.
5. Remove chicken from crock pot and remove from the chicken bones and shred once it is cool enough to handle. Freeze in freezer bags ( I do 2 cups each) for all your chicken recipes!
The Chicken Broth is great idea. Once I've shredded my chicken I start the broth in the same crock pot and cook it overnight.
Chicken Broth
1. Leave all leftover liquid in crock pot and add 6-8 cups of additional water.
2. Pile in some of the bigger bones leftover from the chicken.
3. Add spices (salt,pepper, oregano, basil)
4. Chop and add in onion, carrots, celery to the crock-pot
5. Cook on low for 8-10 hours.
6. Allow to fully cool at the end of the cooking time and strain the broth.
7. Freeze in freezer bags (I do 1 and 2 cups/bag)
These recipes are very flexible and you can alter the recipes easily to meet the needs of you family.
