I've decided to do some freezer cooking/OAMC cooking this summer to see if it helps make getting dinner on the table easier.
Here are my reasons--
First, if we want to do an afternoon activity after naptime, dinner is always on the table late. Yuck.
Second, my sweet daughter--
would prefer that I hold her these days rather than cook--even if she's 10 inches away from me :)
I can't resist her.
Therefore--I need to move fast when prepping dinner or get most prep done while she's napping.
I'm going to do 2 half days of cooking.
Here's my plan--
Dinners:
Meatballs (for Subs)
Southwest Chicken Roll-ups
Sweet Potato Dinner Wraps
Chicken Cutlets (this will be posted on a Sunday soon!)
Cheeseburger Mini-Muffins
Parts of Meals:
Red Sauce (for Spaghetti)
Bacon (BLTs and Biscuit Cups)
Shredded Chicken (Sandwiches and Tacos)
Pizza Sauce
Breakfast:
Bacon Egg and Cheese Biscuit Cups
Baking List:
Muffins
Cookies
Butter horns
I'll serve all meals with fresh fruit and veggies (maybe from the garden at some point???)

Great plan. I'm trying some chicken marinades this month. I thought it might be faster and easier on the kitchen :)
ReplyDeleteI'm joining in Life As Mom's freezer days this week, too. I got started on mine today, actually. Had to take advantage of DH being home to help wrangle the kids while I did some work!! :)
