I've pretty much emptied out my freezer and I'm ready to fill it up again!

As much as I'd like to do it during the scheduled #oamc cooking event hosted by Crystal and Jessica I'm doing mine in bits and pieces and I've only managed to mark a few items off my list.

I've been helping my wonderful husband recover from wisdom teeth surgery, and it snowed 8 inches--can't ignore that!  My baby turns 1 next week and I'm trying to get organized for family to visit and also plan her party.  The list is too long...but blessed!

Here's what I'd like to put in my freezer--

Shredded Chicken

Banana Bread


Refried Beans

Navy Beans
Black Beans



Cook up 8 lbs of Potatoes.


I WELCOME any ideas for the potatoes!  We can only eat so many mashed!

Strategies for Washing Dishes

I LOVE a good TIP--one that will make my life easier, one that will challenge me to think differently.

With that I decided to join in on Works for Me Wednesday.




Washing Dishes

First, I put all the food away, THEN I collect all my dishes into ONE place--no matter how high the pile.  This keeps me from having to move around the kitchen and I can focus on my dishes--see below--


 


And after being washed it all goes LEFT and set out to dry or in the dishwasher.




I then run the dishwasher and dry all the dishes and I haven't had to run around my kitchen.

I love to do dishes.  Does that make me crazy?  I find it relaxing.  After everything is cleaned, dry, and put away I wash counters or sweep--whatever else needs to be done.

Dinner with the Witmer's



Homemade Chicken Soup

Ingredients

2TB Butter
1 Onion, chopped
2 Carrots, thinly sliced
2 stalks Celery, thinly sliced
2 TB minced Garlic
Sprinkle of Kosher Salt

1tsp Basil
1 tsp Oregano
1 tsp Parsley
1/2 tsp pepper
1/2 tsp Kosher Salt


1-2 C Cooked Noodles (I used Elbow Macaroni)

Directions

1. Melt butter in your soup pot. Saute onion, carrots, celery, and garlic and sprinkle with kosher salt.  Cook until veggies are soft.

2. Add chicken broth, oregano, basil, parsley, pepper, and salt and bring to a boil. Reduce heat and add in shredded chicken.

3. Continue cooking until veggies are soft.  Adjust seasonings to your taste.

4. Serve with warm bread.

I truly believe this helped KICK my cold!

Menu Plan Monday


Like I mentioned last week, our pantry challenge is kind of ending a little early since Dad has to get his wisdom teeth out.

I've had to get some food he will be able to eat and I'm not cooking full dinners for myself, my 4 and 1 year old.

We are just going to eat whatever we can find around the house--so it's still kinda the pantry challenge

I've also packed our week FULL of activities so dinner has to be easy!

Here's the plan--

Monday- Spaghetti with Homemade Sauce, frozen veggie, bread

Tuesday- Chicken Soft Tacos, Refried Beans (Crock more Chickens!)

Wednesday- Eat Out

28- 31 Daddy gets his Wisdom Teeth Out--Smoothies, kid favorites, and whatever else we can find!

Pantry Challenge Update #4 We are almost there!!!



 What I Learned--

We made a significant dent in our pantry and freezers this month. 
  
 Eating at Home
We ate out less and shared food with others.  I made a donation to a food pantry and cooked up extra soups for friends.  

Grocery Budget 
The tally for the month is $211--a little more than my hope of $35/week, but it's a HUGE savings over our regular monthly grocery budget.  I'm happy with the results.  I am HOPING we don't have to make another store run this week, but I think we'll run out of bananas.

Stockpiling
Lastly, I learned a little about stockpiling for my family of 4--I don't have to BUY so much when I stockpile.  I can buy 2 packages of chicken, instead of 4.  I'm hoping to see more savings in the months to come :)

Snacks on Sunday

We love snacks in our house.  We also love sports.  Usually I find myself thinking up good snacks for us to eat while the football, basketball, golf, or hockey is on.

We typically have a "snack" dinner on Saturday or Sunday.

Tonight I fixed Black Bean Dip, Homemade Chips and Ham Roll-ups.  Daddy is currently cooking up some of his wings as I type this.  (I've told him he's going to have to "guest post" his recipe :)

Ham Tortilla Rolls

I've been look for ways to use up my holiday ham.  The Everything Quick Meals Cookbook gave me some great ideas and inspired this---

 
Ham Tortilla Rolls

Ingredients

5 small tortiallas
3 oz. cream cheese
1/4 c sour cream
6 slices of leftover ham
1/4 c chopped green onions
1/4 c shredded  Monterey Jack cheese


Directions

1. Have tortillas at room temperature.  Soften the cream cheese, and combine with sour cream.  Spread on tortillas.Cut your ham into stripes.

2. On each tortilla, place 2-3 stripes of ham.  Sprinkle with green onions and cheese.

3. Roll-up wrap in plastic wrap and chill for at least 3 hours.

4. To serve, cut into 1 inch slices.

Mmmm...YUM!

Homemade Chips

These are the BEST.  Healthy. Cheap. Easy.  You control the SALT.  Enough said!

Ingredients

Corn Tortillas
Pam
Salt to your taste

Directions

1. Preheat oven to 400 degrees.


2.. Cut corn tortillas into triangles.

3. Spray sheet pan with Pam.  Lay tortillas on sheet pan and give another spray of Pam on top.  Sprinkle with salt (or not!).

4. Bake at 400 degrees for ten minutes or until lightly browned.

Serve with your favorite Mexican dishes or dips.

Black Bean Dip

Black Bean Dip

**My sister in law (who is an excellent cook) shared this recipe with me many years ago.  Usually, I just make it according to plan, but today I had to improvise because of the pantry challenge.  A new recipe is born!**



Ingredients


11oz can of sweet corn
2 c black beans  
1 bunch of green onions
1 red pepper, chopped

1 plum tomato, chopped

 1/4 c lemon juice
1 TB Olive Oil
1 tsp. minced garlic
1/2 tsp cumin
1 tsp sugar
Salt to taste
Sprinkle with cheese (I used Monterey Jack)



Directions

1. Combine all ingredients in a large bowl.  Chill in the refrigerator for 1-2 hours.  

2. Serve with homemade chips!

A Day in the Life--January 14

In an effort to blog more and get to know my fellow bloggers I'm hosting a monthly "Day in the Life."  I find it fascinating to see how other people live--just a snapshot of what happens day to day.


This will be quick and monthly and falling in the 3rd week of every month--right smack in the middle of all the madness!


Here's A Day In My Life

5:30am sick 4 yr old Thomas wakes up, can't fall back asleep, baby Stella wakes at 7am, diaper change, bottle for baby, juice for son, Mickey Mouse Christmas Movie, bananas and Cheerios for Stella, cereal for Thomas, apple bread for me, pack Daddy's lunch, follow crawling Stella around, start laundry, Stella's morning nap, Cardio X workout, snack for Mommy and Thomas, more laundry, hang laundry out to generate humidity, Thomas rests, fix Stella's bottles, Stella wakes up, bottle, more crawling, vacuum, switch laundry, fold laundry, put laundry away, fix lunch, lunch dishes, fold laundry,  chase crawling Stella, get mail, find that both kids have fevers, Stella's afternoon nap, blog while Thomas rests and I snuggle with him :)

That's today's snapshot--two sick kids and a pile of laundry.

Egg Cupcakes

Along with cleaning out my pantry and I'm also unearthing and going through all my cookbooks to try out new recipes.

We often had breakfast for dinner and I was looking for a way to spice up our regular old scrambled eggs.

These eggs were delicious. I referenced this cookbook because it helps me "keep it simple."

Baked Eggs



Ingredients

4 Eggs
4 TB Cream
4 TB cracker crumbs
4 TB shredded cheese

Directions

1. Grease 4 muffin tins and place one egg in each (just crack and drop them in!).

2. Add 1 TB each of cream, cracker crumbs, and cheese for each egg. Sprinkle with a little salt and pepper.

3.  Bake at 325 degrees for 12-20 minutes (mine cooked for 20 minutes) until the eggs are set.

**Make as many as you want!**

Served atop fresh bread with a side of chopped mango.

My Spices

In an effort to stay organized I've set up a few goals that will span the next several months--

1. Clean a drawer or cabinet out everyday in January and February.
2. By February, have all the clothes organized for donation and spring consignment.
3. Clean out our attic eves and garage in March/April.

The other day I tackled our spice cabinets. This is what it looked like while I was sorting everything out--



Here's what the cabinets look like now :) 



Cyn gave me the idea for using a basket and Heather suggested using the fridge or a drawer for store magnetic round tins that also hold spices.  Thanks for you input ladies!

I managed to get rid of some expired food and collect several things for our local food bank.  Mission accomplished!

Yeast Rolls

Candi over at Family, Stamping and Food, was interested in the recipe I have for Yeast Rolls.

Let me tell you, these are the best I have ever had!  A very good friend brought them to our Mom's Club recipe exchange and baked them at our house and we ate them all soft and warm--there was not a speck left!  She got the recipe from her mother who has been making them for years. 

I've got some in the freezer that I'll be using up during my #pantry challenge.

Here's the recipe--

Yeast Rolls

Ingredients

1tsp salt
1/4 c shortening
1/4 c sugar
1/2 c boiling water
1 yeast pack (or 2 1/4 tsp)
1/2 c cold water
1 egg; beaten
3 c unsifted all purpose flour

Directions

1. Pour boiling water over shortening, sugar, and salt.  Blend and cool.
2. Add egg to shortening/sugar/salt/water/mix.
3. Let yeast stand in cold water for 5 minutes.
4. Stir cold water/yeast mixture and add to shortening/sugar/salt/water/egg.
5. Add flour, 1 cup at a time, mixing after each addition.
6. Brush or dab top of dough with shortening.  Cover with wax paper and place in refrigerator overnight (or 4 hours minimum).
7. 3-4 hours before using, roll into balls (use extra flour to ease handling).
8. Place 3 balls into greased muffin tin, cover and allow to rise 2-3 hours (or double in size).
9. Bake at 425F for 10 minutes.

**You can use a mini muffin tin and it makes the cutest looking rolls!**

Pantry Inventory--Update #3

Pantry Update #3




Most of this week was spent tending to my sick kids which made it easier to stay home and eat from our pantry. It doesn't seem like I marked much more off the list, however, the pantry and freezers are looking more and more empty!

Some goals for the next week include making up several batches of shredded chicken for some upcoming meals I have planned.

Finally, it will be interesting to see what the last week of the pantry challenge bring for our family.  Daddy has to have his wisdom teeth pulled so I won't be cooking my regular meals, but just feeding the kids and Daddy and grabbing whatever I can :)  I've re-adjusted my monthly plan here.

Pantry Challenge



I've decided to take on the Pantry Challenge this month (you'll see why in the next post).  Our freezers (yes, THREE of them) are full, the cabinets are full, and even the fridge is FULL.  Typically when I plan meals I do "shop" in my freezers and cabinets.  The difference this month will be limiting stockpiling and planning meals that come almost completely from our pantry and stockpile.

My guidelines will be--
1.  1 trip to 1 store/week for staples (dairy, fresh fruits and veggies) and keep it under $35.
2. Extra items for baby (she's just getting into finger foods) will be allowed.
3. If we run out of a "must-have" like ketchup, I'm buyin' it!
4. I can stockpile 2 majorly good deals (but I will still try for $35)

I have never done this before so it will be a learning experience and I can't wait to see what my cabinets look like on Jan 31st.

Christmas Cookies 2009

I'm big into goals.  I love having something to reach for and look forward to achieving.

Here's what I plan to try and accomplish on this blog in 2010.  I'm starting small since I've got other personal and family goals to achieve.  I don't want to be overwhelmed and I want to do a good job!

1.Cooking-- I want to experiment  more in the kitchen.  I plan to create and share an original Cupcake Mommie recipe at least 2 times/ month. I also want to continue researching recipes online and in cookbooks that my family and readers will enjoy.  There is nothing better than sitting down to read a cookbook!

2. Content-- Post to my blog more often. This means having better time management skills when I DO have the opportunity to be online. I need to spend less time reading twitter and more time sharing, writing, and creating with my computer. 

3. Community--Comment, participate and share more in other cooking "mommy" blogs.
